Some inspirational statements ...

When you have nothing you are just a little bit hungrier than the person that has everything. And that's something that has really influenced our cooking, and is probably one of the guiding principles in the restaurant that I'm trying to make sure that everyone understands. The hungriest guy in the room, the guy with nothing to lose is the most dangerous person. That's the type of attitude we want. You don't have to be the best cook in the world, but we want people with a high level of integrity that are willing to do whatever it takes. Which is very difficult to find these days.

If someone is better at something, instead of trying to be competitive. I'm just going to be like ... Well, you are better at it, maybe I can learn something, run with it.

Q: Now that you made it ... How do you keep you and your folks honest?

A: By never thinking that we've made it. Don't believe that you ever made it. I'm weirdly paranoid like that. If you start resting on your laurels, you're screwed. Don't believe the hype. Don't believe anything. You have to be your harshest critic. And you have to be constantly improving. It's very hard to do.
